CHÂTEAU DE LASCAUX
In 1984, Jean-Benoit Cavalier took over management of his family's estate in the middle of the immense "garrigue", the wild scrubland of the Languedoc between Montpellier and Nîmes. Maintaining their knowledge and passion, he restarted the private cellar, modernized the grape varieties, replanted new vineyards with typical Mediterranean grape varieties. They reveal scents, aromas and freshness which make the reputation of wines of the Château de Lascaux.
Nowadays, thinking of nature as a living ensemble, preserving biodiversity in the soils, respecting the balance of the vines: an obvious choice made by implementing organic agriculture. This cultivation method oriented towards natural farming practices creates a harmony between the plant and its environment. The initiative continues with now a biodynamic approach.
